If individual stats are too much, how about creating an "overall match rating" that is calculated at the end of each match based on team performance, individual skill level and a (large?) random factor, so at least there is some sort of way to say how any one player is doing.

I was being serious tbh. I made one for CPL Cricket; it takes the quality of the lineups and form into account and tries to predict the likelihood of each possible result. You could do that on your Excel page somewhere and post them up for vBookie occasionally.
